Singapore is a constantly changing place, ever growing, ever adapting, ever improving itself to better serve everyone. In the past 2 years I’ve been here, I’ve seen stores, venues, restaurants come and go in a blink of an eye. One day it’s there, the next it’s gone replaced my yet another of the latest attempt at Singapore market share.

Baristart’s Triple D coming at you! Get ready for some dairy in your everything! You won’t mind once you realize it comes from, where some consider the best place on Earth for dairy (among other edible things); Hokkaido! And right now, Baristart Coffee with ultra rare Hokkaido sourced Brown Jersey Cow Biei Milk, is the newest spot in Tanjong Pagar’s busy Tras Street!

Where is It?

In the heart of bustling Tanjong Pagar, Singapore’s Financial District’s not so secret break from the stress of everyday hustle. A mere 5 minutes walk away from TP’s metro station, is one of the few places to get Hokkaido dairy in the Little Red Dot. You could go to Hokkaido but if you’re in Singapore, Baristart is a lot easier to get to.

Eventually we selected two types of milk (including a pasteurised Jersey milk) and two types of coffee beans. Our Arabica coffee blend has strong acidity and a floral aroma and our Robusta coffee blend is a more on the darker, full bodied side.

What to Eat?

What not to eat? Get everything with Hokkaido milk in it especially when it comes from the rare milk cows in Hokkaido, more rare than the already few Hokkaido cows that are already considered few and far between.

Sadly we didn’t get to try any of their Biei Jersey Milk infused savory foods, however I can attest to the deliciousness of their creamy desserts. There’s a certain quality that the high quality milk imparts on the mouthfeel of the custards and creams that you don’t get with normal dairy:

  • Cream Puff
  • Custard Cream Sweets Jar with Cookies and Fresh Strawberry
  • Mango Shaved Ice Shiro Kuma (bear) with Mango Syrup, Vanilla Ice Cream and Cookies

Don’t feel to bad about eating the edible artwork. While the pictures will look delicious to any onlooker, but there’s nothing quite like eating them first hand. Let the ever so lightly sweetened silky velvet custard waves wash over your palate and mentally take you to Hokkaido (I’m hoping that when I visit Hokkaido that I’ll be inundated with fresh seafood and creamy milk from every which way)!

I do regret not having tried any of their coffee art creations. With that being said, their selection of black coffee is really good, a nice bold flavor that helps cleanse the palate between dips into their milk pool. And anyways, this gives me an excuse to come back sooner than later for more of everything!

Flavor of the Month

Will Baristart stand the test of time? I don’t know, but I know it will last for a while till (if ever) the next culinary usurper enters the area. Personally, I hope to drown myself further in more of their custards and creams before too long (planning a cheat day).

And if I’m really lucky, Baristar’s very own coffee art God. Yuki Takeuchi, will still be on hand to bless me with a black and white milk coffee masterpiece.

If you are lactose intolerant or don’t care for dairy or where it’s from then perhaps Baristart won’t even show up on your radar. Perhaps it’s just another fancy cafe with long lines because of Instagrammed curated food photos? Maybe not…

Go check it out and decide for yourself. What’s the worse that could happen? Maybe you’ll just drink the kool a…. the Hokkaido dairy and become a believer too.
