Garlic Bacon Kimchi Fried Rice Recipe

by May 20, 2013

We got leftovers?

Yeah, and I got more ideas!

Leftover Rice tl;dr

Have some leftover rice? Great, me too, but for me that’s always great news because there is no better usage of leftover rice than making some delicious fried rice.  It’s basically a great catch all for any leftovers you have in your fridge. Here is a simple recipe for some fried rice I whipped up recently.

  • 3-4 slices of bacon
  • 1 cup of kimchi (or as much as you’d like)
  • 5 pieces of garlic
  • 2 cups of pre-cooked leftover rice (1 day old is best)
  • Soy sauce (I prefer low sodium)
  • Sesame Oil
  • 2 tablespoons of Garlic salt
  • Pepper

How We Cook It

  1. Pre-work: Slice pieces of bacon into thin slices and set aside.
  2. Mince garlic and set aside.
  3. Heat up wok. Once the wok is hot, throw in the cut bacon pieces.
  4. Fry until desired crispiness.
  5. Once complete, add the garlic and mix both.
  6. After a minute, add the rice and use a spatula to break up the rice.
  7. Mix everything together. The oil from the bacon should help cook the rice.
  8. Add kimchi.
  9. As everything is getting mixed together, add a splash of soy sauce, a dash of sesame oil, some garlic salt and pepper.
  10. Cook everything together for approximately 5-7 minutes.
  11. Serve immediately.
  12. Add sliced fresh green onions as a garnish if you’d like.

What do you like to do with leftovers other than throw them away?
